Position Summary

University College Cork is an internationally competitive research-led University. The School of Food and Nutritional Sciences, located within the College of Science, Engineering and Food Science at UCC, has almost a century of distinction in research and teaching excellence in its specialties of Food Science, Food Technology and Nutritional Sciences. At the School of Food and Nutritional Sciences, a post-doctoral position for a period of two years is available on the on-going RubusElite project. The RubusElite project is focused on the development of a novel high protein, polyphenol enriched dairy beverage for athletes and physically active individuals. This multi-disciplinary project is funded by the Irish Department of Agriculture and the Marine (DAFM) and is coordinated by University College Cork, with Waterford Institute of Technology and Teagasc Food Research Centre Ashtown as collaborative partners.

Health benefits associated with increased consumption of bioactive plant-based phytochemicals, particularly polyphenols are well established. As global markets for food-based solutions to support performance nutrition continue to expand, there is tangible opportunity for the development of innovative functional foods underpinned by robust scientific evidence. The RubusElite project is developing an innovative high–protein dairy-based polyphenol-enriched beverage which will be subsequently tested for physiological efficacy using a pre-clinical in vitro research platform and then in a proof of concept dietary intervention study in a cohort of athletes.

Expertise in nutritional biochemistry is central to this post. The appointed candidate under the supervision of Prof Nora O’Brien and Dr Alice Lucey will be involved in the conduction of the biochemical and data-analysis for this study and the dissemination of study findings. Working across a team of nutrition, food and sport scientists, the Post-Doctoral Researcher on this project will initially conduct in vitro analysis using cellular model systems to generate data on polyphenol stability (including data on bioacessibility, bioavailability and bioactivity) in novel beverage prototypes. Subsequently, this Post-Doctoral Researcher will have the opportunity to contribute to the proposed dietary intervention in a cohort of athletes where they will oversee the collection and management of biological samples and the conduction of associated biochemical analysis.

This post is for a Post-Doctoral Researcher with experience in laboratory analysis.

Post Duration: 24 Months

Salary: €37,873 - €45,041 p.a. (IUA Salary Scale)
